Embarking on a journey of sorts. Or rather I already have but have decided to document it. 

Really started getting into cooking a year or so ago. Was on a  pretty restrictive diet and wanted to make my cheat day memorable. So my plan is, every week, a different dish for every country (or territory) in the world. 

Several, I've already taken on:

Brazil: Pao De Queijo

Chile: Chacarero Sandwich

Colombia: Arepas

Cuba: Cuban Sandwich

Dominican Republic: Black Bean Stew



Ecuador: Encebollado Soup

Egypt: Falafel

Greece: Moussaka and Gyro


Hong Kong: Pork Bao

Hungary: Hungarian Mushroom Soup

India: Baingan Bharta

Italy: Carbonara and a Paradiso sandwich



Japan: Onigiri

Lebanon: Chicken Shwarma

Mexico: Birria Tacos and elote



South Korea: Bibimbap with bulgogi

Thailand: Tom Yum Soup and Summer Rolls

Tunisia: Shakshuka



Turkey: Doner Kebab

Puerto Rico: Shrimp Mofongo and Arroz Con Gandules

Vietnam: Banh Mi

I'll probably make posts revisiting these as we get into the swing of things. But, for now, I can promise this. This week I will be taking on France, and will have a delicious post to match.

  Portugal: Of Kale, Cod, and Carnations         Situated at the rugged edge of Europe- a rocky shore perpetually battered the Atlantic- Portugal had no choice but to throw its fate to the sea. The Portuguese became the vanguard of an era ripe with exploration and discovery, their caravels stitching together continents. While spices and riches galore returned with these ships, the kitchens of the Portuguese people told a different story. Salt cod, sardines, sausages, kale. These are the foods Portugal is known for, food built to survive, not dazzle. (Though with 365 ways to prepare salt cod, who needed glamour?)       Of course, these industrious and no-nonsense people built a global empire, one that by the turn of the 20th century was topheavy, and poor.
