Australia: Just the Recipes
Australia: Damper and Defiance
Damper (Traditional Bush Bread)
A simple soda bread baked in ashes or oven
, originally made by stockmen and miners.
Ingredients (makes 1 large loaf):
3 cups (450g) self-rising flour (or all-purpose flour + 3 tsp baking powder)
1 tsp salt
1 cup (250ml) milk or water (traditional: water for a plainer version)
Optional: 1–2 tbsp butter or lard for richer texture
Steps:
Preheat oven to 200°C (400°F) or prepare campfire coals.
Mix flour and salt in a bowl.
Make a well, add milk/water gradually, and mix to form a soft dough.
Knead lightly on a floured surface (don't overwork).
Shape into a round loaf, score a cross on top.
Bake in oven 25–30 minutes until golden and hollow-sounding when tapped, or cook in hot ashes 20–30 minutes (turn once).
Serve warm, broken by hand, with butter, golden syrup, or jam.
Notes: Traditional versions use no baking powder or butter—just flour, salt, water. Self-rising flour is common in modern home recipes for fluffier results.
